Mango Cheesecake Ice Cream

A sweet, creamy and tangy ice cream combining mangoes and the flavours of cheesecake. 

Mango Cheesecake Ice cream


Ingredients

  • Whipping Cream: 1 Cup
  • Sweetened condensed milk: 1/2 Tin
  • Cheese Cubes: 5 to 6 ( 60 Gms) in room temperature
  • Mango pulp: 1 Cup ( Pulp of 3 mangoes beaten with 4 tsp sugar)
  • Lime juice: 1 Tsp
  • Digestive biscuits: 2 - 3 nos

Method

  • Whip the cream with a hand mixer until soft peaks are formed.
  • Add the condensed milk and further beat for a minute.
  • Soften the cheese with the back of a spoon or spatula
  • Add the softened cheese to the cream and condensed milk mixture
  • Assemble the ice cream in a container by transferring half of the cream mix and then scoop out few spoons of mango puree on top of it and arrange of the biscuits. Repeat one more time with remaining cream, puree and biscuits.
  • Freeze overnight and scoop out the ice cream.

Rainbow Ice cream

Who doesn't love a rainbow? Those colours add on beauty to everything. What if we could combine that beauty with taste? Yes, we can! With this fruit flavoured rainbow ice cream you can add beauty and taste to your dessert. Check out the video to see how to make this flavour filled colourful treat for your loved ones. 


Ingredients :

  1. Skittles small packet: 4 to 5 packets
  2. Whipping Cream: 1 Cup
  3. Sweetened condensed milk: 1/2 Tin
  4. Food Colour: Few drops (Optional)

Method:

  1. Separate the skittles by colour and melt each colour on stove top by adding 1/4 cup water for each colour. Once the skittles melts, continue to stir for 2 minutes and slightly thicken the syrup
  2. Keep aside after melting each colour
  3. Whisk the cream with hand mixer or stand mixer until soft peaks are formed.
  4. Add the condensed milk and whisk again for 30 seconds to 1 minute
  5. Divide the mix equally into 5 bowls
  6. Add one colour each to the divided cream and mix. ( Can add food colour to get darker colour)
  7. Assemble all five colours into a freezer safe container and allow to set overnight.
  8. Scoop out the beauty and relish

Strawberry Cheesecake ice cream

Strawberries are blooming in this time of the year and I am an ice cream lover. Trying different ice cream recipes are my all time favorite kitchen adventures. Yesterday while browsing the fruit shelves the nearby grocery i happened to sight a rack of red ripe strawberries. I was then sure that that was gonna be the ingredient in my next ice cream. And here goes the scripture of my adventure ...

Ingredients


  • Whipping cream: 2 cups 
  • Condensed milk: 1 tin (397 gm) 
  • Cream cheese: 1/2 cup (125 gm softened to room temperature) 
  • Fresh or frozen strawberry: 1 cup 
  • Sugar: 1/3 cup 
  • Lemon juice: 1 tsp 
  • Corn flour: 1 tsp 
  • Any cookies: 5-6 nos (optional)

Method


1. In a pan add the strawberries, sugar,cornflour and lemon juice and bring to boil. Cook until its thick and coats the back of the spoon. Keep aside to cool.


2. While it is cooling, beat the whipping cream until soft peaks are formed. To this add the condensed milk and beat further until smooth.



3. Smoothen the cream cheese with a spatula. Add the cream cheese to the whipped cream and beat further until well mixed.



4. If you prefer the bite of cookies in the ice cream then you can add it at this stage by crushing the cookies and folding it into the mixture. If bigger chunks are preferred then break cookies accordingly.

5. In freezer safe container pour half of the beaten mixture and on top of it pour half of the berry mix and create a swirl pattern by simply running a fork along through it. Repeat layer by pouring all of the cream mixture and then top it with the left over berry mixture. Create swirl and arrange few chunks of the cookies on top.



6. Allow it to freeze overnight and scoop out this lovely ice cream.
Note: if you prefer cheese bits in between the scoop then u can cut the cheese into small cubes and then beat it with whippedcream else put as one block after it is very soft.

Coconut Ice Cream

Home made ice creams are the most easiest dessert that you can make...All you need is the patience to wait while its freezing to the perfect creamy texture.. No one likes to bite ice crystals in their bowl of ice cream but would you love to bite those yummy coconut shreds in between the white creamy ice cream ? If you love to have that yummy treat then this is the best way... Look down for those simple ingredients and the way to get it done...

Ingredients

  • Whipping Cream : 300 ml
  • Condensed milk : 200 gm (half a tin)
  • Thick coconut cream : 300 ml 
  • Desiccated Coconut : 2 tbsp
  • Coconut oil : 1 tbsp
  • Roasted coconut flakes to garnish (optional)

Method

  1. Beat the cream until soft peaks are formed
  2. Take few scoops of this whipped cream to another bowl and add all the other ingredients and mix well with a whisk
  3. Add this mixture to the remaining whipped cream and fold gently until.the coconut mix is completely mixed with the whipped cream
  4. Transfer to a freezer safe container and wait for a minimum of 8 hours or preferably over night
  5. Scoop out and garnish with few roasted coconut flakes or simply enjoy the smooth delicacy as I did.

Note:

You can add up to 400 ml of coconut cream if you prefer a strong coconut flavour. I used store bought coconut cream for this recipe. If you prefer making home made cream then extract thick coconut milk from freshly grated coconut and leave in fridge until it forms a thick layer on top and water settles in the bottom. Do not add the water. Just add the cream on top and it should work perfectly fine.

Yet another experiment with ice cream... Presenting an all new type of ice cream from experiments in my kitchen.. Alter the flavour just by altering one ingredient. All you need is just 3 ingredients for this new ice cream flavour.

Ingredients

  1. Whipping cream: 300 ml
  2. Sweetened condensed milk: 200 gm
  3. Ready make cake mix ( any flavour ): 50-60 gms

Method

  1. Whip the cream until stiff peaks are formed
  2. In a separate bowl mix the cake flour and the condensed milk
  3. Add this to the whipped cream and slowly fold using a spatula
  4. You can also add small bits of cup cakes while folding.
  5. Transfer to freezer safe container and freeze overnight
  6. Scoop and enjoy
Note: I used lemon cake mix. But you can use any flavour cake mix of your choice. Simply using a different flavour of cake mix will give you an alltogether new ice cream. Experiment with your favourite flavour today!

Fried Ice Cream




A dessert which has always created a curiosity in me! How can someone fry ice creams? I always doubted if it would melt and make a mess when dipped in sizzling oil. But to my surprise this worked out well. This recipe for the Mexican fried ice cream is a foolproof method and is tried and tested at home. The scooped ice cream is breaded and then deep fried. I have illustrated two ways of coating them, you can use any of those as both works perfect. I am attaching pictures below for each step wherever possible. You can use the recipe for homemade vanilla ice cream (below) or can use store brought ice creams too.Please do try and taste this hot crispy coated cold ice cream! 

Ingredients

  • Ice cream of any flavour: 1 large scoop for each serving
  • Bread slices: 2 per serving or Bread crumbs to coat the ice cream
  • Egg: 1 beaten ( if coating with bread crumbs)
  • Oil to deep fry

Method

  1. Scoop out large scoops of ice cream and keep it in an open plate in the freezer for 2 hours
  2. Cut the edges of 2 bread slices and flatten them with a rolling pin and keep ready 
  3.  Take out the ice cream from the freezer and quickly place it in the middle of 1 slice of the flattened bread and cover it with the other slice and press tightly to form a ball. put it back in the freezer for 30 minutes
  4. If using the bread crumbs then dip the hard frozen scoop of ice cream in beaten egg and quickly coat it with bread crumbs ( just like we do it for cutlets) and put it back in freezer for 30 minutes
  5. Deep fry the breaded ice cream for less than a minute on high flame so that the bread/bread crumbs is browned but ice cream stays intact 


The ice cream covered in both methods:  bread crumbs and the whole flattened bread
Hot out of the oil
6. Serve hot with chocolate sauce

 
Note: You can use the whole breaded method if you prefer a thick coating of bread on the ice cream and the bread crumbs method if you like that crunch like a cutlet. Out of the two methods I personally found coating with the crumbs to be easier than the whole bread method but both worked good.

Two Ingredient vanilla Ice Cream

Ingredients

  • Whipping Cream: 300 ml
  • Sweet Condensed milk: 200 Gms
  • Vanilla Extract : 1 Tsp

Method

Add all the ingredients to a mixing bowl and beat with an electric beater until stiff peaks are formed (almost 3-5 Minutes). Transfer the mixture to a freezer safe container and freeze overnight. Scoop and enjoy!!

Chocolate Ice Cream

After making ice cream at home for the first time I have never wanted to buy ready made ice creams. The taste, easiness to make, satisfaction of serving self made ice creams and the knowledge of the ingredients being used are all factors why I started experimenting with flavours in home made ice creams. The base of most of my home made ice creams are whipped cream and sweetened condensed milk. To this, I keep doing changes with the flavours and when I succeed i love to share with you all. Here is one such success recipe, Chocolate Ice Cream with 3 ingredients...


Ingredients  

  • Whipping Cream: 300 Ml
  • Sweetened Condensed milk: 200 Gms
  • Cocoa Powder ( unsweetened): 4 Tbsp


Method

Mix the condensed milk and the cocoa powder in a bowl



In a separate mixing bowl whip up the cream with a hand mixer until stiff peaks are formed

Add the cocoa-condensed milk mixture to the whipped cream and whip further for a minute. Then with a spatula make sure all the whipping cream is well mixed with the cocoa and has even brown colour all around


Transfer to air tight container and freeze overnight.

    Drizzle some chocolate sauce for that extra chocolaty flavor and scoop out to enjoy!!

Fig and Honey ice cream




An amazingly luscious ice cream with the rich flavour of dried figs and authentic honey is just a few steps away. With easily available ingredients, you can now make your family go , "Wow," with this quick and easy recipe.

Ingredients

  • Milk:  300 Ml
  • Corn flour: 2 Tbsp
  • Condensed milk: 1/2 tin (200 gms)
  • Vanilla essence: 1 Tsp
  • Fresh Cream: 150 Ml
  • Dried figs: 80-100 gms
  • Honey: 2 Tbsp
  • Water: 100 ml
Method

  1. In a flat pan pour the water and cook the figs in medium flame for 10 mins or until water evaporates
  2. While the figs are cooking, mix the cornflour with about 100 Ml of milk and make it lump free and then add the remaining milk and condensed milk and mix well and cook on medium flame until the mixture slightly thickens (about 5 minutes). Switch off the flame and allow to cool
  3. While the milk mixture is cooling smash the cooked figs with a fork to form a pulp.
  4. Once the milk mixture is completely cooled add the cream, vanilla essence and honey and mix well
  5. Finally add the smashed figs and give a good stir
  6. Transfer to a freezer safe container and chill for an hour
  7. After an hour beat the ice cream mixture with an electric blender for about 2 mins and allow it to freeze again for a minimum of 8-10 hours
  8. Scoop out and enjoy!!

Cheesecake ice creams is the new trend in branded ice cream outlets and are high on demand. This recipe would give the luxury of having a scoop of such an ice cream at your home. Believe me when I say its tastier and healthier than the store brought ones. Try it out for yourself!!!!

Ingredients


  • Whipping cream: 2 cups
  • Condensed milk: 1 tin (397 gm)
  • Cream cheese: 1/2 cup (125 gm softened to room temperature)
  • Fresh or frozen blueberry: 1 cup
  • Sugar: 1/3 cup
  • Lemon juice: 1 tsp
  • Corn flour: 1 tsp
  • Any cookies: 5-6 nos

Winter has come and its time to get some fresh strawberries and blend them to great ice creams or smoothies. Here is a recipe for a really creamy and yummy fresh strawberry ice cream.

Ingredients

  • Strawberries: 8-9 numbers
  • Sweetened condensed milk: 14 Oz tin
  • Whipping cream: 1.5 cups
  • Vanilla extract: 1 tsp
  • Salt: 1/8 tsp
  • Red food colour: 1 pinch (optional)
Method
  1. Chop 3-4 strawberries to tiny bits and keep aside
  2. In a blender add the remaining strawberries and make it into a puree ( this should measure almost 3/4 cup to 1 cup)
  3. To this puree add the condensed milk, vanilla extract, food colour and salt and blend well until all gets mixed well. Transfer this mixture to a bowl and add the chopped strawberries and mix with a spatula.

4.Whip the cream until stiff peaks are formed preferably with an electric mixer

    5.Fold this cream gently into the strawberry mix until all the cream disappears.

    6.Transfer to a freezer safe container and chill overnight
    7.Scoop and enjoy this heavenly dessert!

Today’s recipe is a very traditional ice cream from India – Kulfi. Kulfi has similarities to ice cream in appearance and taste; however it is denser and creamier. The flavours are something that you can experiment with but today I am sharing with you a very common flavour of the kulfis and it’s the pistachio flavoured one.
 Ingredients
· Evaporated Milk: 400 ml
· Sweetened condensed milk: 1 tin
· Whipping Cream: 300 ml
· Saffron Strands: A generous pinch
· Cardamom powder: ¼ Tsp
· Pistachios and Almonds chopped: 3-4 tbsp
 Method
  1. Mix the evaporated milk along with the saffron strand and cardamom powder and just heat it until all flavours are blended into the milk (abt 3-4 mins. Do not boil) 
  2. Mix the condensed milk, the pistachios and the almonds (crushed) well
  3. Add the evaporated milk mix to the condensed milk and mix well until everything is well mixed and keep in the fridge for 15-20 minutes
  4. Meanwhile whip up 300 ml of cream until soft peaks and fold this carefully into the chilled milk mix. Vigorous mixing should be avoided as this will let out all the air from the whipped cream and will not give the kulfis the needed texture.
  5. Transfer the mix to Popsicle molds or any freezer safe containers and freeze overnight. 
  6. Unmold or scoop out these beauties and enjoy the traditional Indian ice cream.

Oreo Ice Cream

A scoop of Oreo Ice cream was always on my priority list on a visit to the ice cream outlet. Today I was bent on trying out an Ice cream recipe. This recipe gave me the perfect creamy ice cream without ice crystals biting in between.



Ingredients

  • Oreo cookies : 10-12
  • Whipping Cream : 1 Cup
  • Milk : 1 Cup
  • Milk Powder : 1/4 cup
  • Powdered Sugar : 1/4 Cup
  • Condensed milk : 1/4 Cup
  • Vanilla essence (optional) : Few drops

Method

  1. Use a food processor or blender to crush the cookies. You can crush it to powder or small chunks if you prefer a bite of Oreo in your ice cream
  2. Whip the cream until soft peaks are formed
  3. To this add all the other ingredients and fold well using a spatula until all ingredients are well incorporated.
  4. Transfer to a freezer safe container and chill overnight.
Note: You can mix the ice cream after 3-4 hours of resting in the freezer for best results. But its completely optional. I have tried both ways and has worked out to be amazing either ways. I just mix it once as I don't like ice crystals in between the ice cream.
