Coconut Kheer ...A very tasty Kheer or Payasam made in less than 5 Minutes. It just needs two main ingredients and you get an option to customise your kheer by adding any garnishing of your choice. With so little time and effort I was definitely not expecting this taste. But on tasting, i decided to share this easy recipe and save a lot of your time.


Ingredients

  1. Ready made coconut milk: 400 ml tin
  2. Sweetened condensed milk: 1 tin (397 gm)
  3. Any nuts of your choice: 2 to 4 TBspn
  4. Khas Khas or sabja seeds or sago seeds: 2 to 3 tsp

Method

  1. Soak the khas khas or sago seeds in water. If using sago just cook it for 10 mins after soaking
  2. Mix well the coconut milk and condensed milk in a bowl with a fork or hand whisk
  3. Add desired nuts and soaked khas khas and mix
  4. Chill for few hours or overnight.
  5. Serve cold

Berry Tiramisu

Here is a twist on a classical dessert that highlights another flavour combo that we loved at home. This tiramisu uses a berry flavour instead of the traditional coffee and cocoa. The lady fingers dipped in orange juice gives it a unique flavor and I have used a cream mix instead of mascarpone cheese. Lets look into how we can get it done.

Ingredients

Serves: 6-7 
For the cream layer

  • Thick Cream: 150 gms
  • Whipping cream: 50 Gms
  • Powdered Sugar: 5-6 Tbsp ( Can adjust to taste)

For the biscuit layer

  • Lady finger biscuits: 1 pack
  • Orange juice to dip the biscuits

For the Berry jam layer

  • Any berries of choice; 300 Gms ( fresh or Frozen)
  • Sugar: 100 - 120 Gms

Method

  1. Prepare the berry jam by heating the strawberries and the sugar until the sugar melts completely. Allow to cool and refrigerate until ready to be used
  2. Whip the cream until soft peaks are formed and then add the thick cream and sugar and give a good mix with a spatula
  3. Take an appropriate dish to arrange the dessert which is about 4 inch of height and form the bottom most layer with the lady finger biscuits after dipping them in fresh orange juice. 

On top of this layer spread the cream layer and then the berry jam. 

Keep repeating until all the cream and jam is used up. Keep in mind that the top most layer should be the cream.

Dust a teaspoon of cocoa powder through a sieve on top of the cream layer to give that finishing touch.
Allow to set in fridge for 5-6 hours.
Slice and enjoy
Note: You can also set this desserts in individual ramekins or pudding bowls and serve as a whole or set it in one big dish and slice according to need.
I used strawberries and blueberries for this recipe but you can choose any berry of your liking.

Bread Pudding - No Bake, Eggless

Bread Pudding No bake, Eggless

An eggless no bake bread pudding for those who want a healthy dessert! The combination of sweet milk and bread with the caramelized sugar makes this pudding a favorite for all those dessert lovers. The earlier recipe I posted of  Bread pudding was a baked one and I used eggs. Upon requests from the vegetarians and the non bakers I am posting a no bake eggless bread pudding here. Do try and post your feedback and doubts in the comments section !


Ingredients


  • Milk: 500 ml
  • Gelatin: 1 Tbsp ( or China Grass 5 gms )
  • Milkmaid: 1/2 tin (200 gms)
  • Bread Slices: 4
  • Fresh Cream: 100 ml
  • Sugar: 4 Tbsp for caramel & 4 Tbsp more for milk


Method

  1. Dissolve the gelatin in 2-3 Tbsp of boiling water and keep aside
  2. Boil the milk with 4 tbspn of sugar
  3. Meanwhile trim the edges of the bread and cut it into small pieces
  4. Mix the milkmaid and the cream in a separate bowl and keep ready 
  5. Add the dissolved gelatin to the milk mixture
  6. Soak the bread pieces in this milk mix and keep ready

       7. Add the milk maid and cream mix to this and mix well and keep ready to be transferred to the pudding dish.
       8. Now to make the caramel, add the sugar to a heavy bottom pan and melt it on medium flame without stirring and until it becomes brown and smells like caramel as shown in the video below. Make sure not to burn it.

        9. Pour this into the dish in which you will be setting the pudding, on top of this pour the milk and bread mixture and allow to set overnight
Caramel

        10. Cut into slices and serve with caramel side up. or simply serve it with bread side up with some drizzled caramel.
Note: If you are using an aluminium dish to set your pudding then you can caramelize the sugar in the same pan and simply add the milk mixture over it and set in fridge

strawberry panna cotta

Strawberry Panna Cotta - Its the time of the year for some Reds, and strawberries are the ones you may have a handful of.... Lets create a loving impression for those dear ones !

Ingredients

Makes about 4 servings

  • Milk: 200 ml
  • Whipping cream: 200 ml
  • Gelatin powder: 1/2 tbsp (5 g)
  • Sugar: 1/4 cup
  • vanilla extract: 1 tsp

For the Strawberry Sauce
  • Fresh or frozen strawberries: 300 gms
  • water: 2 tbsp
  • Sugar:1/3 cup (70g) 
  • Gelatin: 1/2 tsp

Method

  1. Dissolve gelatin in 2 tbsp cold water and let it swell for about 5 to 10 minutes. 
  2. In a medium saucepan bring the cream, milk and sugar to a simmer over medium-low heat (Do not boil). When sugar has dissolved remove from heat and add vanilla extract. Let cool for 5 minutes before adding the gelatin. 
  3. Add gelatin in the milk mixture and stir until the gelatin has completely dissolved. Pour it in the serving glasses as shown below to make it look attractive. Just keep glasses tilted and pour the mixture and allow to set in the same inclined position.
  4. To prepare the sauce cut strawberries in quarters. In a small saucepan put the strawberries, sugar and water. Bring to a simmer and remove from heat immediately. 
  5. Pour into the bowl of a blender or food processor and blend the mixture to make a smooth sauce. Pass through a strainer to remove the seeds out of the sauce, if needed. Mix half tsp gelatin in little hot water and once dissolved add it to the sauce and dissolve completely.Cover and let it cool to room temperature then refrigerate until ready to serve.
  6.  Before serving pour the strawberry sauce over the panna cotta and serve.

Note: You can always use your creativity and change the type of berries you add in this dessert. Try it with blueberries, cranberries or apricots and peaches..

Raffaello Pudding

If you have ever tasted the Ferrero Raffaelo chocolate it would not be hard for you to recognize the taste of this pudding. The pudding uses the same flavours as the Rafaello chocolate and it’s a wonderful combination of coconut and cream with the right sweetness and texture of a soufflĂ© or a pudding. Here is how you can enjoy this wonderful combination at home.


Ingredients

· Desiccated coconut: ½ cup

· Fresh Cream: 100 ml

· Whipping cream: 100 ml or a 36 gm packet of whipping powder

· Condensed milk: ½ tin

· Gelatin: 1 Tbspn

· Cold water: ¼ cup





Method

1. Soak the gelatin in ice cold water and keep aside

2. In a mixing bowl beat the whipping cream until soft peaks are formed. Add in the fresh cream and beat further. (If using whipping powder just add the powder to the fresh cream and beat together until soft peaks are formed.)

3. To this add the condensed milk and soaked gelatin and mix well until everything is blended.

4. Finally add the desiccated coconut and give a mix with a spatula. (do not use electric blender after adding the coconut)

5. Transfer the mix to a pudding dish and allow to set in fridge for 5-6 hours

6. Serve chilled with raffaello candy

Note: To make the raffaello candies add desiccated coconut to a bowl and keep adding condensed milk little by little to the coconut and keep mixing until a nice dough consistency is formed. Roll this mixture to small roundels and roll it over desiccated coconut to get them coated and the candies are ready. The amount of coconut depends on the number of candies you would need. I just used about ¼ cup of coconut and less than ¼ tin of condensed milk to make 5 candies to garnish.

Bread pudding : Baked



Stale bread lying around in your kitchen? Here's the best way to use it. I love this recipe because it needs very less ingredients and very less preparation time. All what is needed is the time needed to bake this. For this wonderful delight you ll need:

Ingredients

  • Bread slices : 6 ( with sides trimmed)
  • Butter : To spread on both the sides of the bread
  • Milkmaid : Half a tin
  • Milk : 300 ml
  • Eggs : 2 beaten
  • Vanilla essence : 1 tsp
  • Raisins : 50 GMs


Method

Pre heat oven at 180°C
  1. Butter the bread slices on both the sides and then cut it into two triangles
  2. Mix the milk , milkmaid and beaten eggs until well combined and mix in the vanilla essence
  3. Take a baking dish preferably a loaf pan or a similar shaped one with less breadth but more height and length)
  4. Arrange a layer of overlapped bread slices and scatter raisins on top of it. Again arrange one more layer in the same way. Keep arranging till all slices are done and scatter raisins in between slices
  5. Pour the milk mix on the top most layer and the gaps by soaking all slices well
  6. Place in a pre heated oven for 25-30 minutes in 180° C or until the top layer changes to golden brown in colour
Scoop and have this lovely delight when its warm.

Citrus orange has taken a new new twist and its called the citrus delight. A truly refreshing dessert which has the natural flavour of oranges and a divine fragrance from it. To get started you will need:


  • Gelatine : 3 tsp
  • Cream : 300 ml
  • Orange juice from fresh oranges : 450 ml
  • Milkmaid : 1 tin

Method

  1. Take some orange juice from the 450 ml and dissolve the gelatine until the crystals melt
  2. Add the remaining orange juice to this and heat it over a pan of boiling water ( double boil) until the gelatine completely dissolves
  3. Beat the cream with a wire whisk until soft and add the milkmaid to this and mix softly until well combined . To this add the gelatine mixed orange juice and mix well
  4. Transfer the mix to individual bowls and allow to set in fridge for 4-5 hours until set.
  5. Garnish with some fresh oranges and cream and feel the true delight for yourself

Jelly pudding 

What if I say this is the most easiest pudding you could have ever made? I know some of you might have got an image of an easy pudding that you have made in your kitchen...But I seriously doubt if that was the easiest coz trust me when I say my 6 year old , Ziana made this yummy pudding herself! It was literally a moment of joy to see it get unmoulded and not to say the smile on her face was a smile of achievement! So yes, let's move on to the three ingredient pudding!



Ingredients

Condensed milk : 1/2 a tin
Thick cream or any cream that can be whipped : 200 ml
Jelly crystals : 1 packet

Method

  1. Prepare the jelly crystals simply by following the packet instructions ( you can use any flavour. I'm using orange today. But I have tried it in mango , strawberry and lime and all are equally good and worth a try)
  2. While the jelly is setting in the fridge beat the cream with a whisk till soft. ( Need not spend lot of time ..just say about 5 mins with hand whisk)
  3. Once the jelly is semi set ( set at the sides and shaky in the middle of the bowl) fold in the milkmaid and the beaten cream slowly with a spatula until the milkmaid and cream mixes well with the jelly and all big pieces of jelly is broken
  4.  Wet mould of your choice and transfer the mix to the moulds and allow to set completely in the fridge.  Demould when set.
Enjoy the easiest dessert!

Note : If you prefer jelly pieces in your pudding you can fold in the milkmaid and cream after the jelly is little more set than the semi set consistency.
