Kulfi



Today’s recipe is a very traditional ice cream from India – Kulfi. Kulfi has similarities to ice cream in appearance and taste; however it is denser and creamier. The flavours are something that you can experiment with but today I am sharing with you a very common flavour of the kulfis and it’s the pistachio flavoured one.
 Ingredients
· Evaporated Milk: 400 ml
· Sweetened condensed milk: 1 tin
· Whipping Cream: 300 ml
· Saffron Strands: A generous pinch
· Cardamom powder: ¼ Tsp
· Pistachios and Almonds chopped: 3-4 tbsp
 Method
  1. Mix the evaporated milk along with the saffron strand and cardamom powder and just heat it until all flavours are blended into the milk (abt 3-4 mins. Do not boil) 
  2. Mix the condensed milk, the pistachios and the almonds (crushed) well
  3. Add the evaporated milk mix to the condensed milk and mix well until everything is well mixed and keep in the fridge for 15-20 minutes
  4. Meanwhile whip up 300 ml of cream until soft peaks and fold this carefully into the chilled milk mix. Vigorous mixing should be avoided as this will let out all the air from the whipped cream and will not give the kulfis the needed texture.
  5. Transfer the mix to Popsicle molds or any freezer safe containers and freeze overnight. 
  6. Unmold or scoop out these beauties and enjoy the traditional Indian ice cream.
