Kuska

Kuska is a rice dish of primarily South Asian origin made with spices, rice (usually basmati) and ghee. It's a lunch dish, primarily served with Kurma or Korma and is very popular in Southern India

Ingredients

To grind
  1. Oil / Ghee: 1 Tsp
  2. Cinnamon stick: 1 inch 
  3. Cloves: 3
  4. Green chillies 2
  5. Shallots: 6
  6. Ginger and garlic : 1 Tsp each
  7. Tomato : 1/2
  8. Mint and coriander leaves

For Rice

  1. Oil / Ghee: 1 Tsp
  2. Bay leaf : 1
  3. Green Chilli : 2
  4. Onion : 1 Chopped
  5. Salt
  6. Tomato : 1/2 
  7. Kashmiri Chilli powder : 1 Tbspn
  8. Turmeric powder : 1/2 Tsp
  9. Garam Masala : 1/2 Tsp
  10. Water : 5 1/4 Cups
  11. Basmati Rice : 3 cups
  12. Eggs : 5 boiled Optional
  13. Curd : 1/2 Cup (optional)


Method

  1. Heat a pressure cooker and add ingredients from the grinding section (1 - 8) and saute and transfer to a mixie jar
  2. In the same cooker heat oil and add bay leaf and green chilli and onion. 
  3. While onions are cooking grind the masala in the mixie jar without adding water and keep ready
  4. Meanwhile onions would have been cooked, add the tomato
  5. Once soft add the powders and mix well. Add curd at this stage if preferred
  6. Add the water and salt and allow to boil. 
  7. Add washed and drained rice ( Boiled eggs if preferred) and allow to cook for 1 whistle
  8. Wait for 5 mins and open and garnish with chopped coriander leaves.
