Coxinha: Brazillian street snack

Coxinha


Coxinha, a Brazilian street food which are fried dumplings  made with cheesy chicken filling wrapped in chicken flavoured dough and then coated with bread crumbs and deep fried. It is a version of the Chinese Fried momos.


Ingredients

For the dough

  • All purpose flour: 3/4 cup
  • Chicken stock cube: 1
  • Water to knead the dough

For the filling

  • Chicken breast: 1 full
  • Pepper powder: 1 tsp and little more for cooking the chicken
  • Onion: 1/2  finely chopped
  • Garlic: 2 cloves
  • Cream cheese: 100 gms
  • Salt
  • Oil: 2 tbsp for sauteing and for deep frying
  • Coriander leaves optional


Other Ingredients

  • Bread crumbs: To roll the coxinha
  • Egg: 1 beaten



Method

Preparing the filling

  1. Cook the chicken with about 1/2 tsp of pepper powder and salt. Once cooked and cooled shred the chicken with a fork
  2. To a pan add the oil and saute the onions and garlic until translucent. Add the shredded chicken and flavour it with salt and pepper and switch off flame
  3. Add the cream cheese and mix well and add coriander leaves at this stage if desired.
Preparing the dough
  1. Boil about 1 cup of water and dissolve the stock cube.
  2. Add this water little by little to the flour and knead to a smooth dough.
  3. Take out small portion of the dough and roll it out to small circular patties.
Making the Coxinha
  1. Add some filling inside the rolled dough and fold so that the chicken is completely enveloped in the dough. Shape it into a point at the top
  2. Dip it in the egg and roll it over the bread crumbs until well coated.
  3. Heat oil and deep fry the coxinhas until golden brown and serve hot with mayonnaise or ketchup.
This goes well as a tea time snack or a starter for parties.
