Chicken kadai

Kadai Chicken is a spicy chicken dish with a rich aroma given by the whole spices and tomatoes. The thick gravy makes it an excellent side dish for rice and roti. The dish is usually served in a brass dish called ‘Kadai’ in Indian restaurants and hence the name.

Number of servings : 3-4

Ingredients

  • Chicken : 1/2 Kg with bones cut into small pieces
  • Oil : 2-3 Tbsp
  • Pepper Corns : 1 Tsp
  • Cinnamon : 1 inch stick 
  • Cloves : 4-5 
  • Onion : 2 Medium sized (finely Chopped)
  • Tomato : 2 nos finely chopped (Canned or Fresh)
  • Ginger Garlic paste : 1 Tbsp
  • Red Chilly powder : 1 Tbsp
  • Coriander Powder : 1 Tbsp
  • Coconut Milk : 1 cup (Extracted or powder)
  • Salt to taste
  • Coriander leaves
Method

  1. Heat oil in a kadai (Wok) and add the Cinnamon, pepper corns and cloves and saute for few seconds
  2. Add the chopped onions and salt and saute until soft 
  3. To this add the ginger and garlic paste and saute till raw flavor goes
  4. Add red chilly powder and coriander powder and mix well followed by the diced tomatoes
  5. Cook the tomatoes with lid closed until they go soft 
  6. Add the chicken and mix well until it gets coated with the masala and cook for 5 minutes on low flame
  7. Then add the coconut milk and cook for another 10-15 minutes until the gravy thickens
  8. Add chopped coriander leaves and serve hot with rice or rotis.
