Chicken kadai
Kadai Chicken is a spicy chicken dish with a rich aroma given by the whole spices and tomatoes. The thick gravy makes it an excellent side dish for rice and roti. The dish is usually served in a brass dish called ‘Kadai’ in Indian restaurants and hence the name.
Ingredients
- Chicken : 1/2 Kg with bones cut into small pieces
- Oil : 2-3 Tbsp
- Pepper Corns : 1 Tsp
- Cinnamon : 1 inch stick
- Cloves : 4-5
- Onion : 2 Medium sized (finely Chopped)
- Tomato : 2 nos finely chopped (Canned or Fresh)
- Ginger Garlic paste : 1 Tbsp
- Red Chilly powder : 1 Tbsp
- Coriander Powder : 1 Tbsp
- Coconut Milk : 1 cup (Extracted or powder)
- Salt to taste
- Coriander leaves
Method
- Heat oil in a kadai (Wok) and add the Cinnamon, pepper corns and cloves and saute for few seconds
- Add the chopped onions and salt and saute until soft
- To this add the ginger and garlic paste and saute till raw flavor goes
- Add red chilly powder and coriander powder and mix well followed by the diced tomatoes
- Cook the tomatoes with lid closed until they go soft
- Add the chicken and mix well until it gets coated with the masala and cook for 5 minutes on low flame
- Then add the coconut milk and cook for another 10-15 minutes until the gravy thickens
- Add chopped coriander leaves and serve hot with rice or rotis.
