Pina colada souffle

Pina colada

An authentic combination of pineapple and coconut usually served as a cocktail but I created a soufflĂ© out of it . The caramelized pineapples gives the dish an extra mileage. A very easy to make recipe using very less ingredients. Try it and enjoy the awesomeness of pina colada in a bowl!



Ingredients

  • Milk : 2.5 cups
  • Coconut milk : 1 cup (thick)
  • Sugar or condensed milk : 3-4 tbsp
  • Shredded fresh coconut : 2 tbsp ( i used frozen coconut)
  • Sugar to caramelize the pineapple : 1/3 cup
  • Corn flour : 2 tbsp mixed in a table spoon of water
  • Pineapple chunks : 500 gms tinned ( approximately 400 Gms drained weight)

Method
  1. Mix the milk , coconut milk , shredded coconut and sugar / condensed milk in a pan and boil the mixture. Once boiled reduce flame to medium and allow to boil until mixture reduces to almost half and thickens well. This should take a good 12-15 minutes. To this add the corn flour mixed in water and cook for another 5 minutes until the mixture becomes thick
  2. Meanwhile divide the pineapple into two equal portions and coarse grind one portion. Add the other half to a pan along with 1/3 rd cup of sugar and allow the sugar to melt. Keep stirring the mixture frequently for another 7-8 minutes in medium - high heat until the pineapple is well caramelized and becomes golden brown. Keep aside a portion of these caramelized pieces for garnishing and add the coarsely ground pineapple to the pan along with the remaining caramelized chunks. Mix well in slow flame until the paste also gets coated with the caramel. Note : The pieces set aside for garnish has to be kept on well greased parchment paper to prevent from sticking and also keep in mind to keep the pieces separated from each other.
  3. Allow the milk mixture and the caramelized pineapple to cool down completely. Once cooled add the caramelized chunks and paste mixture to the milk mixture and stir well. Do not add when the mix is warm as it will cause the milk to separate. Allow to cool in fridge for 4-5 hours
  4. Garnish with the caramelized pineapple chunks and serve cold
