Gobi 65


Gobi 65 is a very famous vegetarian starter and a very sought after dish at the restaurants. Blanched cauliflower mixed in spices and then double fried in the oil gives this dish a crunchy coating and makes it a great starter.



Ingredients
  • Cauliflower florets : 15-20 large
  • Corn flour : 4 Tbsp
  • All purpose flour : 3 tbsp
  • Rice flour : 1 tsp
  • Red chilli powder : 3 tsp
  • Ginger garlic paste : 2 tsp
  • Garam masala powder : 1 tsp
  • Some chopped curry leaves and coriander leaves
  • Green chilli : 1 finely chopped
  • Lime juice : 1,5 tsp
  • Salt to taste

Method

  1. Soak the florets in boiling hot water and add a pinch of turmeric powder and salt and keep aside for 15 minutes. After that drain it and keep ready
  2. Meanwhile prepare the marinade by mixing all the above mentioned ingredients without water
  3. Now add the florets and get it coated with the marinade by sprinkling very little water
  4. Heat oil in a kadai and deep fry the coated florets until it is cooked all through
  5. Remove from oil and allow to cool for 10 minutes and fry the cooked florets once again in hot oil. This helps the florets to get a crisp coating.
Once double fried this veggie makes a great starter or side dish. Try this and let me know how it came out.
