Sweet and Sour Chicken
Sweet and sour Chicken is a deep fried tender boneless chicken pieces wrapped in a sticky sauce and is a great Chinese dish which would make your supper delicious..Ingredients
For the marinade
- Boneless Chicken : 500 gms (Cube sized pieces)
- Apple cider vinegar: 2 Tsp
- Soy Sauce: 1 Tbsp
- Salt to tatse
- Egg: 1 beaten
- Cornflour: 2 Tbsp
For the sauce
- Chicken Stock: 300 ml ( Using 1 stock cube or fresh chicken with bones )
- Soy Sauce: 1 Tbsp
- Vinegar: 1 tbsp
- Sugar: 1 Tbsp
- Spring Onions: 3 full roots with leaves
- Pepper (optional): 1 tsp
- Corn flour: 1-2 Tbsp mixed in 2 Tbsp water
- Tomato paste: 2 Tbsp
- Capsicum: 1 cut into cubes
- Oil: to shallow fry the chicken pieces
Method
- Marinate the chicken with the soy sauce, salt and vinegar for about 10 mins
- Beat the egg and add the corn flour and mix well to make a smooth batter. Add the marinated chicken to this and coat all pieces well with the batter
- Heat oil and shallow fry the chicken on both sides until golden brown. Drain off any excess oil
- Boil the chicken stock and add the soy sauce, vinegar, sugar, pepper, tomato paste and little salt. Lower heat and add capsicum and spring onions and cook for 5 minutes.
- Pour the cornflour mixed in water little at a time by continuously stirring the sauce. Add the chicken pieces once the sauce is thickened. Coat the chicken with the sauce.
- Serve hot!
